Abstract :

<p>&nbsp;</p> <p class="MsoNormal" style="text-align:justify;text-justify:inter-ideograph;&#10;text-indent:35.4pt;line-height:150%"><span style="font-size:12.0pt;line-height:&#10;150%;mso-ansi-language:EN-US">Celiac disease (CD) is defined as a permanent intolerance to gluten. It is an autoimmune condition that appears in genetically predisposed subjects. It is prompted and maintained by the consumption of cereals containing gliadins or prolamins, which are present in wheat, barley, rye and oats (1,2).<o:p></o:p></span></p>
